I love eating pigeon, but whenever I do, undoubtedly I think of a refrain from a childhood song: "...little birdies dirty feet...". Here in Umbria we have the added task of removing the feet from the bird before roasting. Anyway, I love the gamey flavorful taste of pigeon, and it's perfect to serve on a bed of white cannellini beans. The perfect Sunday fall meal. Buon'Domenica e buon apetito!
